Time to whip up some rocky road, yum!!!

When I was young, I used to bake all of the time with my mum and my grandmother (making the obligatory mess, of course!).

The prize – yummy biscuits, scrumptious cakes and delicious treats!!!

What I didn’t know at the time was that I was also learning valuable skills – cutting soft ingredients like butter with a plastic knife, mixing dry ingredients with a spoon and learning how to weigh ingredients by reading numbers on a kitchen scale.

With Australia in lockdown, I’ve dug up this simple recipe that you can whip up with your favourite preschooler, with special thanks to one of our very own Tiny Toes Ballet mums. Her website, The Baby Vine is a life saver and provides resources for parents with children in those first few precious years of life.

My favourite chocolate bar of all time!!!

what you will need:

  • 2 x 220g block Cadbury milk chocolate
  • 30g copha
  • 1 cup granulated nuts
  • 200g marshmallows
  • 200g glace cherries

instructions:

1. Chop marshmallows and glace cherries into quarters.

2. Break up chocolate into pieces and roughly chop up copha.

3. Bring small saucepan of water to a simmer. Place heatproof bowl on top to create a water bath.

4. Place copha and chocolate into water bath and stir. Once chocolate is almost melted, turn heat off and continue stirring until smooth.

5. Take bowl off heat and mix in remaining ingredients until just combined.

6. Line a baking tray with foil. Pour out the chocolate mixture and spread it out across the tray. This doesn’t need to be very precise, leave the mixture as thick or thin as you would like.

7. Place in freezer for two hours. Remove from freezer and leave to melt slightly for 15 minutes before cutting into pieces.

8. Once cut, you can store rocky road in the fridge.
